About

Rooted in over a century of traditional French baking practice, this sourdough culture reflects the quiet evolution of village boulangeries and regional breadmaking across rural France.

In the early 20th century, before industrial baking became widespread, many French bakeries maintained their own living levains — carefully refreshed daily and shaped by the rhythm of local flour, climate, and baker’s hand. From the rye fields of the north to the wheat-growing regions of the south, each bakery developed subtle variations of fermentation that gave French bread its renowned balance, aroma, and texture.

This particular culture carries that lineage of steady, restrained fermentation — the kind favoured in traditional French boulangeries where consistency, elegance, and balance were valued over intensity. It reflects a baking philosophy built on patience and precision, where dough is allowed to develop naturally and express itself with clarity.

French Heritage Culture continues that tradition today — refined, stable, and deeply connected to the foundational principles of classic French breadmaking.

Taste Profile

A refined, balanced sourdough with a thin, crisp crust and a light, airy crumb. The flavour is delicate and structured, opening with a gentle, clean acidity that is noticeably softer than more aggressive sourdough styles. Subtle notes of fresh wheat and light yogurt-like fermentation sit at the core, supported by a faint nutty sweetness. The finish is clean, elegant, and slightly dry, with a restrained tang that lingers without sharpness or bitterness.

Preservation

Each culture is preserved through a careful process designed to honour its original character while ensuring it remains in a state of exceptional vitality. Rather than altering its natural profile, we maintain it within a tightly controlled balance of hydration, temperature, and refresh cycles — a “Goldilocks” zone that protects its historical integrity while keeping the microorganisms active and resilient.

The result is a living culture that carries its original depth and complexity, yet is primed for immediate revival. When reactivated, it awakens predictably, delivering a highly active fermentation that reflects both its heritage and the precision of its care.
