About The Ancient Grain

Preserving Living Baking Traditions

Based in Melbourne, Australia, Ancient Grain began with a simple fascination: the idea that a living sourdough culture can survive for decades,
sometimes generations, being passed from one baker to the next.

Unlike commercial yeast, every sourdough starter has its own story. It develops character over time, adapts to its environment,
and becomes part of the baking tradition that keeps it alive.

What started as a personal interest in sourdough quickly grew into a passion for collecting, preserving, and sharing rare sourdough
lineages from around the world. Today, Ancient Grain exists to make these remarkable cultures accessible to home bakers across Australia.

Our mission is simple: preserve rare sourdough cultures and help more people experience the joy of baking with them.

More Than Just a Sourdough Starter

Every lineage in our collection has its own history.

Some originate from small artisan bakeries. Others have been maintained by families and communities for generations.
Each culture offers a unique baking experience, with its own fermentation characteristics, aroma, flavour profile, and personality.

While flour, technique, and environment all play a role in the final loaf, the starter remains the heart of every sourdough bake.

By carefully maintaining and distributing these cultures, we’re helping preserve a small piece of baking history while giving modern bakers
the opportunity to continue the story.

Preserving Heritage Cultures

Every culture we offer has been carefully selected for its history, character, and significance within the world of sourdough.

We work with trusted international culture preservation specialists and heritage sourdough custodians who maintain some of the world’s most
fascinating sourdough lineages. These cultures are then propagated, monitored, and prepared in a professional commercial kitchen environment before being carefully dehydrated and packaged for distribution.

Maintaining the integrity of a sourdough culture requires far more than simply feeding flour and water.

Strict handling procedures, dedicated equipment, controlled environments, and careful culture management all play an important role in preserving
the unique characteristics that make each lineage special. By following established best practices throughout the propagation and drying process,
we aim to ensure every culture remains as true as possible to its heritage and baking tradition.

The result is a collection of rare and remarkable sourdough starters that allow Australian bakers to experience cultures with histories spanning
generations, and in some cases, centuries.

We consider ourselves caretakers of these cultures, entrusted with preserving them and passing them on to the next generation of bakers.

Making Sourdough Accessible

We believe great sourdough should be accessible to everyone.

You don’t need a commercial bakery, expensive equipment, or years of experience to create beautiful bread at home. Whether you’re baking your first loaf
or have been maintaining a starter for years, the right culture can make the process more enjoyable and rewarding.

Every starter is carefully prepared, tested, and packaged in Australia to ensure it arrives healthy, viable, and ready to begin its next chapter.

Our goal is to remove the intimidation and help more people discover why sourdough baking has captivated bakers for centuries.

Meet Chris

Hi, I’m Chris.

Ancient Grain started with a simple curiosity about sourdough. Like many people, I began baking because I wanted to make better bread at home.
What I didn’t expect was to become fascinated by the cultures themselves.

The more I learned about sourdough, the more I realised that every starter carries a story. Some have travelled across continents. Others have been
maintained through generations of bakers. Many have survived far longer than the people who originally nurtured them.

The idea that a living culture could be preserved, shared, and continued by bakers around the world captivated me.

Today, Ancient Grain exists to help preserve and share these remarkable sourdough lineages with Australian bakers. My goal is simple: make it possible
for anyone, regardless of experience level, to connect with the rich traditions of sourdough baking and experience cultures they may never otherwise encounter.

Whether you’re baking your very first loaf or adding another lineage to your collection, I’m grateful you’ve chosen to be part of the journey.

Together, we’re helping keep these cultures alive for future generations.

Our Promise

We’re committed to providing authentic, carefully maintained sourdough cultures that honour the history they represent.

Every starter we offer is treated as more than a product. It’s a living culture with a story worth preserving.

Thank you for supporting a small Australian business dedicated to keeping these remarkable cultures alive.
